Goulash soup is one of the most famous and beloved dishes of Hungarian cuisine, captivating both locals and international gourmands for centuries. If you want to experience authentic goulash soup in a truly traditional setting, visit the Főőrség Restaurant & Café, located in the heart of Buda Castle!
The preparation of goulash soup
At Főőrség Restaurant & Café, goulash soup is prepared according to a traditional recipe. The secret to the perfect goulash lies in carefully selected ingredients.
First, finely chopped onions are sautéed in pork fat until golden, then enhanced with Hungarian wax peppers and tomatoes to create the perfect stew base. The diced beef neck is seared separately to lock in its rich flavors before being added to the pot. The dish is then seasoned with salt, ground caraway seeds, and crushed garlic. The beef is slowly simmered, allowing its natural juices to develop into a thick and flavorful sauce, with water added gradually to ensure the perfect consistency.
Once the meat is halfway cooked, premium-quality Hungarian paprika is stirred in, followed by diced carrots, parsley root, celery, and finally, potatoes to complete the dish.
Presentation is just as important as preparation: the goulash soup is served with freshly made homemade pinched noodles (csipetke) and sprinkled with finely chopped parsley. It is accompanied by fermented rustic bread, perfectly complementing the rich flavors of the dish.
