One of the specialties of our restaurant is the Emperor’s Crumble, made according to a 100-year-old recipe, where centuries-old perfected techniques and the finest ingredients come together. This raisin dessert is one of the iconic sweets of Hungarian gastronomy, each bite taking you back in time, evoking sweet memories.
We serve our Emperor’s Crumble with vanilla custard, and you can choose between the Vienna or Budapest version. The Vienna version is served with fresh cherry jam, whose tartness perfectly harmonizes with the sweetness of the dessert. In the Budapest version, apple compote provides a spicy and fresh note to the dessert.
Two popular legends explain the origin of the Emperor’s Crumble. According to one, Empress Elisabeth of Hungary’s (Sisi) court chef first prepared it for the imperial couple. The other claims it was Emperor Franz Joseph’s invention. Its original name (Kaiserschmarrn) indeed comes from the emperor, meaning emperor’s crumb in a literal translation.
Viennese Emperor’s Crumble:
Traditionally enjoyed with apple sauce according to the original recipe.
Budapest Emperor’s Crumble:
Only differs in the accompanying jam, which in this case is a homemade jam made from Nagykör cherry.
